Texas Bourbons and Other Drink (and Hot Avocado Sauce)

    Agree with Joshvar in re: Treaty Oak, they make good stuff! Also for sheer FUN, one should try (at least once) TX Whiskey, it is uniquely “soft and vanilla-y”; almost a chocolate thing goin’ on. Balcones, as already mentioned. Another good TX whiskey is Red River…. I’m going on memory here, moved to NH from Hill Country 15 months ago, and didn’t bring any OPEN bottles back…

    There are so many distilleries opening up in the “triangle between Austin, San Antonio, and Fredricksburg (just as there are wineries) that it’s hard to keep up.

    re Wineries: we’re quite partial to Flat Creek (up north of the lake, near Marble Falls) who make excellent big reds (including their Sangiovese which is quite excellent), and to Driftwood Estate Winery (in Driftwood just north of Wimberley).

    Texas wines have come a LONG ways in the last 10 years, and, with the right producers, can now hold their own on the world stage:if, and it’s a big IF, they concentrate on the right grapes and don’t try to “copy California”, etc.

    Not buying a lot of wine these days (we did move about 700 bottles back north from Texas, and am building yet another wine cellar in my life to accommodate), but came back with a couple of cases of Flat Creek and Driftwood wines…

    Unfortunately, the price-performance ratio for Bourbon/Whiskey has gotten a bit whack of late; alas my more frequent tipples are more typically Buffalo Trace, Makers Mark, JB Black, Willett Pot still, Bookers, etc… but always fun to try.

    we are the only weirdos that can commingle the greatness of french aperitifs and texas bourbons... so
    this is not my personal photo, but for reference:

    I have had 2-3 of these, namely the "red wax top" on high left, and the two small square bottles in center top.
    the red top is one of my favorites, not overly sweet - but the many long herbs (ok weeds) in the bottle make this especially pungent and fresh on each pour. alas, my bottle is empty. the weed stalks remain.

    the less-sweet bottle was the empty/clear bottle of top center picture, with the gold cap.
    best balance of herbal, strength and sweetness.

    I can't recall the super green bottle since i never owned it directly, just tried it somewhere in france late at night IIRC?

    and obviously the tilted bottle (center right) is a goal to find, because. tilted.

    shhh, don't tell @CEE TEE but I recently scored a bottle of Green Chartreuse V.E.P.
    the skies parted and miracles still do happen.
    will only open it for the next important family event. or apocalyptic state change of the world.

    just to be clear for peoples- all genepi is "more sweet" that typical liquors.
    but some genepi are "less-sweet" than other genepis.

    AFAIK you aren't going to get a genepi that feels like a dry (or crisp) pear / apple Eau Du Vie.

    I really don't have experience with many nice or high-end whiskeys, but I do live in Blanco (if anyone comes out, send me message!) Milam & Greene is great, but definitely don't miss out on Andalusia — their Stryker is my favorite (they have some single barrel bottles but you have to buy a 3 pack, with one bottle for each of the barrels used in the blend.) Andalusia and Milan & Greene hands down make my favorite whiskeys I've tried, and it's nice and right next door.
