    Made myself some Arroz Caldo today. Pretty much the national sick food of the Philippines, so it screams comfort food for me.

    What I find interesting with the recipe I used is that it didn't need any patis/fish sauce or even ginger. Regardless, it was very good.

    What a coincidence. That looks very similar to the Caldo Gallina we saw pretty much everywhere in Peru for less than a buck (just got back from a vacation there). Their version is a bit more watery, doesn't have eggs, and sometimes has noodles instead of rice.

    The Philippines were a Spanish settlement for 300 years. "Caldo" means broth in Spanish.

    I make this several times a year because the family loves it. Its wonderful, but costs a lot of money and takes a long long time.

    Shake Shack has made its way out here... But my first experience was underwhelming. I like the performance... but not for the price. If those burgers were 3-4$ a piece, I'd be way more into Shake Shack.

    I'm a sucker for a good burger. A good burger isn't that hard to make but most places eff it up by using a Wonder Bread equivalently crappy bun. There's a little small town diner about 10 mi away from me that does it up with a proper brioche bun and locally grown produce.

    Five Guys just came to town this week. I haven't had one of their burgers since I was in Flagstaff a couple of years ago. I remember being pretty impressed, but I was starving after hiking in the Grand Canyon so maybe my memory is skewed. I can't remember if their buns were passable or not.

    My favorite burger is my own. The secrete is in the rub (spices) and the way it's cooked. The grill must be super hot. Sear it about 2.5 minutes on each side, no more. Maybe throw on a piece of Provolone at the end if you like cheese.

    But I wouldn't actually call it comfort food. For it to be comfort food, somebody else needs to make it. A good BBQ sandwich from my local BBQ joint usually does the trick.

    Cheese on toast, with chopped onion, tomato and garlic. :p

    My mouth is watering, the onion, tomato and garlic is chopped... and the cheese is a solid uncuttable block, because our maid put it in the freezer o_O :rolleyes: :eek:

    (maid. yes. We are reasonably well off in Indian terms, but not rich in international audio terms :cool: )

    It's the tropics: the cheese will warm up. The problem now is catching it when it gets soft but not warm, else I won't be able to "grate" it in the mixie.

    (mixie. That's what we call a food processor)

    My wife's spinach/ricotta "white" pizza with lots of garlic is tonight's comfort food, waiting for me soon. I'll add a beer or two and be very happy...

    Paprika based goulash with beef. Connective tissue from beef melts into gelatin, which gives the goulash its thickness. Red peppers and onions are first roasted over a flame with the carbonized skin scraped off. No tomatoes. I am not a fan of tomatoes in Cajun, Asian (including Indian), or Central European stew type dishes. No potatoes either. I love carrots in beef stews.

    Pho and Ramen are my comfort foods, I'm still trying to master how to cook both... especially a good pork ramen! The bowl here is from Tokyo Deli in Wilmington NC, sadly Nick the owner and his wife are trying to retire so >.> I've got to figure it out soon

    I'm honestly tempted to just take 2 weeks of PTO and try my hand at interning with him... work for free in exchange for some knowledge! I've been visiting their restaurant for 3 years now...

    The key to pho is a massive amount of beef bones. Look up how to make the French pot-au-feu and you'll see it's basically the same except with different spices and the addition of noodles.
