Any of you folks cook?

    I have quite a strong passion for cooking though I'm not extremely good. I do have these recipes I attempt once every week at least though. This week was brie en croute with some orange marmalade + raspberry coated almonds + dried cranberries inside of the brie before baking it.

    I only make things that the gays might cook.
    By that, I mean I bake.

    Cookies, cupcakes, brownies, cakes, pies, all that shit goes in my oven. Oh, and pizza. With lots of sausage. LOTS OF DELICIOUS MEAT IN EVERYTHING I PUT IN MY MOUTH. So I guess more than just baking, I grill burgers and chicken, lots of noodle dishes. I need to learn how to make fried rice, I'll eat that stuff by the pound.

    I definitely cook as a necessity. Not to be close-minded, but I don't understand people who don't cook or say they can't cook. I feel like it is a necessary skill to survive haha. Saves me so much damn money and time.

    I don't make bad food, but I don't really have the time to expand my skills and variety of dishes. I would actually love to see some recipes and stuff on here.

    Fried rice is hella easy to make. Trust me since I pretty much stir fry everything.

    You just need to find a supplier to get some good quality Asian white rice. Put that stuff in a rice cooker, scramble a couple of eggs in the meantime, cook up some meat if you want to, chop some veggies to put in as well. Then use some oil (sesame, olive, whatever) and layer your pan. Put the white rice and stir fry it. Add a little bit of soy sauce, salt, pepper to flavor it, and then add in the veggies, eggs, meat. You can add a bit of soy sauce and salt after putting that ish in (depends on how salty and dark you want your fried rice). Then, just cook till brown.

    I thought you put the egg in the rice when you cooked it to brown.. Nonetheless, I'll try an' make some on the weekend.

    Skip the soy and use oyster sauce.

    For egg texture that isn't all mush, stir up the egg first before frying into a large thin omelette, then slice up into thin strips and gently mix into your fried rice after you've already mixed in everything else.

    Yep this works too. I just use soy sauce because that's all I have on me.

    Tip for fried rice by an Asian: keep the cooked rice in the fridge overnight before frying so it doesn't get mushy.

    I wouldn't be even telling people how to make fried rice if I wasn't Asian. You can also just keep it warm on the rice cooker for a while longer before frying to dry it out.

    Nah, you don't really have to be Asian to teach fried rice, but it does make you sound like an authority.

    yes, I cook... but simple stuff.

    Once upon a time many decades ago I thought that one just put some uncooked rice in a frying pan with some oil and fried it!

    My wife is Asian: she does the rice frying in this house.

    I cook, but lately I've been pressed for time, so I've been trying some quicker things like making sauces. The sauces get stirred into a serving of meat and veggies that I've steamed for the entire week on the weekend. I'm all about being lazy.

    Some sauces experimented with this week:
    • Crushed in a mortar and pestle: diced green chillies, soy sauce, fish sauce, lemon juice, garlic
    • In a small sauce pan: dash of butter, dash of heavy cream, japanese curry powder
    • In a small sauce pan: dash of butter, dash of heavy cream, dry parsley, smoked Spanish paprika, sesame oil, cayenne, red wine vinegar
    That last one was way peculiar, but just as tasty as the others. I'm not really a recipe follower, I just try to understand the underlying principles and play around.

    I do all of the cooking at home.

    As for fried rice, I learned how to make it from a Taiwanese family. They were huge on using Hondashi and I'm certainly in no place to contradict them. I've been using it ever since.

    And as mentioned above, the day old rice is key.
