    Then season them improperly! Just lightly oil and keep on a low flame on the stove. I know, I know... just not done! But... it is better than loosing them to rust.

    No "proper" cast iron here, just (apart from the stainlesss) a couple of mild steel frying pans. The larger one is seldom used, and has once been lost to rust but resurrected by wire-brushing, sanding and :oops::oops:... improper seasoning.

    I'd like to try copper pots.

    yah, my wife whips a batch of those up every other weekend. when I'm not making the Sunday morning dutch baby pancake in the La Creuset dutch oven that is. ha!

    I'm more an apple pancake guy, or banana pancake, or blueberry/strawberry pancake...... you get where I'm going.

    I'm not at high altitude, but any chance I could get in on your recipe as well? I used to make the Joy of Cooking dutch baby recipe all the time. Would be fun to try an alternative.

    ok, try this on for morning delight:

    Ingredients-
    3 large eggs, room temp
    3/4 cup milk
    3/4 teaspoon pure vanilla extract

    Dry ingredients in a bowl-
    1/2 cup high altitude flour
    1 teaspoons brown sugar
    1/4 teaspoon ground cinnamon
    1/8 teaspoon nutmeg
    1/4 teaspoon salt

    2 tablespoons butter
    Zest lemon, mix with 2 teaspoons brown sugar
    Powdered (confectioners') sugar

    -----
    Instructions:

    Preheat oven and La Crueset to 450 deg

    Thinly slice an apple or pear into circle shapes.
    In hot pan, melt 1+1/2 tbsp butter
    Lay in fruit slices.
    Sprinkle light amounts of cinnamon and brown sugar on top of fruit.
    Bake for approx 6 min should not brown.

    Room temp Eggs in mixing bowl, whip for a few minutes until frothy
    Leave stand few minutes.
    remix a bit
    Add dry ingredients bowl
    Add in milk and vanilla
    Mix until batter mostly even.
    Do not over mix.

    Remove hot pan from oven, add either 1/2 -1 tbsp butter as needed to melt.
    slowly pour batter in circle over fruit and butter.
    Bake in oven approx 16 minutes.

    side condiments optional:
    Zest a fresh lemon (skin) into bowl, add in some brown sugar. stir to create lemon sugar.
    Slice lemon into small triangle wedges, serve in bowl.

    remove from oven, cut into fourths and serve immediately.
    squeeze lemon wedges onto pancake, sprinkle on lemon sugar lightly to taste.

    your pan may to be more upright or smaller in diameter based on the ingredient quantity posted.

    not all guys can get the big pancake rise the first time.

    The internet recently taught me that I can poach eggs in the microwave... in one minute!

    Whoa... This is the quickest way (along with the toaster) of making a simple snack that I have ever come across.

    Some come out better than others. I suspect egg size and starting temperature matters. But frankly, if I try to poach eggs in a pan of water, most of them don't come out better than others. So I'm winning and its quicker!

    Its amazing that I spent so many decades with microwaves and never knew this :oops:

    I once tried to cook a whole egg in the microwave. The boom was satisfying. The cleanup not so much.

    Ahem, yes... I did know that's a no-no :cool:

    It's not a good idea to microwave anything that is sealed, especially when it has an air pocket in it.

    What's best for poaching in general? room-temperature egg? Fresher eggs have thicker whites, I think. I guess the eggs we are getting at the moment are not very fresh: quite a lot of white seems to just mix with the water. I might have got that fresher/older thicker/thinner thing the wrong way around.

    There is something about the pure simplicity of a poached egg, even more than boiled, which has always appealed to me.
