I'm in the middle of building this Lepin kit too, using the official LEGO instructions (available from Lego.com) rather than the Lepin version, and I have had some of the same problems you have, but in some cases there are solutions in the box.

Firstly, those 2x1 light bley hinge tops that are missing - use black ones, and save the 2x2 hinge tops for the dark bley tiles that hinge down in the gap on the central piece between the mandlbles - in your picture above, you can see the six tiles in question in their upright position - they should actually be angled down to a sympathetic angle to the slopes either side of them.

Secondly, the axle connectors for the landing gear. In my kit, Lepin supplied both the ridged connectors, which have the friction problem you describe, and also some different axle connectors that are smooth, but fit right down between the studs on the landing gear, so they have a much more secure connection. The instructions don't use them anywhere else, so I can only assume that is what they are there for.

In general, building this thing has been a good experience, but I've found that Lepin Technic pins are much more brittle than real LEGO ones, and also quite a bit more difficult to fit into holes. The regular system bricks also seem to be of a more easily scratched plastic than LEGO, as several of my pieces came out of the box with minor gouges.

Anyway, I hope these piece suggestions help.

My Lepin landing gear, using black hinge tops and the alternate axle connectors:

Thanks for the tip. I swapped the six 2x2 hinge plates from the landing gear with the 1x2 hinge plates at the top between the mandibles. This left only one landing gear to fix; and it turned out I had an extra 1x2 hinge plate in my spare hinge and connectors parts box.

I didn't get any other axle connectors for the landing gear (from other Lepin kits, I've noticed that different colored connectors have tighter fits!). Hopefully, Lepin gave you enough 2x3 light grey plates. They were so sorely short that I even ran out of those parts from my extra parts stash and ended up using alternate colors. Finally, note that the pieces proscribed in the Lepin manual for placing under the plate of radar dish (to mount to the Falcon) are significantly different from that in the Lego manual. The Lepin manual tells us to use 2x4 bricks, which are too tall and quite different from the custom single piece indicated in the Lego kit.

All the Lepin kits seem to be missing parts or getting some minor parts slightly wrong. The Blockade Runner that I recently put together was really good though. I was only missing a large 6x4 block, which I simply replaced with three 2x4 blocks.

It's probably going to be 2-3 times that by the time it hits ebay... and any serious Lego collector with money is probably going to need two sets. One to build and one to leave unopened.
