    I mentioned this in a status update but didn’t realize there was a coffee thread: we’ve had a hell of a time sourcing paper Chemex filters recently. I actually prefer v60 as a brewing method, but we bought a Chemex Ottomatic to make mornings easier with the newborn. We bought a metal filter in the interim but I hate cleaning it and I hate how it lets fines through.

    anybody got a black market Chemex filter dealer?

    What about cloth filters? Hoffman did an episode on them, and they're commonplace in my part of the world (at low cost, neighbourhood coffee stalls)

    I’d be willing to try them again, but last time I used them they were also kind of a pain to clean. I just compost the paper ones.

    I would not say it tastes intense. It is named Death Wish because they select and roast the beans for high caffeine levels. It is organic and fair trade but a blend so it lacks that special complexity only found in Single Origin Coffees. Clean tasting is the main aspect of the flavor to me.

    I discovered quite by happenstance a coffee roaster from BC, Canada near where I grew up whose coffee I adore.

    I have been enjoying their Kick Ass for my espresso lately, and it's scrumptious - just nutty and full bodied enough to work well in an Americano, but not so dark that it is easy to overextract.

    Anyone who is a master of v60, please share your brewing tips. Tried 4:6, James Hoffman, Rao, and still can't really get a perfect taste. :(

    I found Rao be really consistent. Are you sure about temperature consistency and have you checked thermo accuracy in boiling water? Are you using a scale to weight the water as you pour and to weigh the coffee dose? Is your grinder good?

    yes to all. I have a comandante C40, acaia pearl S scale, and ekg boiler. Just really having difficultly getting this yemen bean under control. I also tried volvic water, crystal geyser water, and third wave.

    Brewing 15/250 usually, but sometimes change the ratio to 1/17. Tried 1:15 and it came otu so bitter.
    I grind medium coarse.
    I bloom for 45s. Get my timing under 3 minutes consistently. Always have a flat bed. I'm wondering because without agitation, the cup gets too acidic, with too much it has this weird holo bitterness, so I hate agitation from rao's method, and too much swirling also adds weirdness.

    Temperature adjusted according to bean.

    Just really hard to get bitterness and acidity to be completely balanced. Acid you get more notes, but less coffee taste, bitter and you hit a wall and notes aren't as pronounced.

    These yemen beans just have me so confused as I failed 3 cups in a row Lol.

    I love yemeni beans historically! They can be pretty wild. Not as common these days with the conflict. Where did you get them? Last ones I had were earlier this year from a roaster in Kuala Lumpur. What temp?

    I’d say scrap the v60 and get a kalita wave 185 (porcelain model; glass is too fragile and the metal one drains too slowly). Much easier to get consistent results (esp when you’re half asleep while trying to brew). The only downside is that you need to buy their flat-bottom filters.

    I've finally gotten the Rao method working properly and it's been consistent for me as well.

    When I first started, I used the V60 method that Mistobox has videos for and got consistent results with it as well. It's funny because it directly disagrees with Rao in a couple of places.



    But the Rao method is a little simpler, overall, so that's where I'm at.

    Good morning coffee lovers. Only recently got into the coffee game having been a tea drinker all my life (what was I doing?) Currently using a Nespresso contraption and looking to upgrade - budget is around $500 - looking for a machine that only makes coffee - i.e., frothing is unimportant but no drama if it's present - have a slight preference for vintage or machines with long retail history that are still sold.

    Keen to hear recommendations that are comparable with the Silvia (current preference) as recommended by Zach above.

    If newer machines are the way to go then please chip in with those too.

    A buddy of mine could use some advice. He's moving to Vancouver next year for 2 years, any good roasters for pour over?
