    It's a Vietnamese noodle/soup dish that you're pronouncing incorrectly.

Okay real answer. It’s a thin beef(or chicken) soup cooked for a very long time with fish sauce, star anise and other spices. It’s served with rice noodles and usually has a plate of sides that consist of green herbs, lime and bean sprouts. The beef soup can have literally every cut beef you can think of.

Whenever I introduce my friends to Vietnamese food this is usually the first thing I take them to eat. I would say to find a pho restaurant in your area, however I’ve noticed Vietnamese people like to change their recipe to accommodate what they think white people like. So it’s good in Houston and SoCal, but the pho places I’ve been to in college towns have not been good. Basic rule, if you find more Asian people then white people there, it’s likely to be pretty good. Bonus points if the place is playing Vietnamese karaoke music.

@Cspirou I'm in Anaheim and you're in Irvine. Any favorite pho places in the area?

    @imackler

In Westminster I like Pho 54 and Pho Quang Trung on Bolsa. Pho Hanoi on Jeffery road and Pho Sao 1 are my Irvine places.

From what @Marvey says about feu pho sounds pretty solid, although I don’t know if I would go that far for pho. But it’s added to my Google maps.

There was a very good place where Chai Lan is now on Irvine Blvd in Irvine. Most of Irvine sucks for Asian, despite one million Asians there. If you are in Anaheim, better off going to Little Saigon in OC. Check out the following places:

Pho Lu: specializes in oxtail pho. I've heard from friends that this place as slipped.
Pho 79: cash only. basic no frills pho. good thin tender slices of meet. not overcooked low quality crap.
Brodard: go for Bo Kho here (hearty V beef stew) and get the spring rolls.
Pho Pasteur Hien Vuong: only go for the smashed filet-ginger pho - everything else is mediocre.

My knowledge of these places is several years out of date. Asians are extremely discerning of food.

It looks like the apartment in Los Feliz has fallen through, something about having a job and a credit history, weird. I've gotten verbal confirmation though on a place halfway between Downtowns Glendale and Burbank. Much less posh apartment and neighborhood but with cool neighbors, easy street parking for visitors and my own garage which another tenant says that we're allowed to keep full barbecue grills in. I'm picturing ordering an Aficionado for local pick up to pair with my Gungnir Multibit and a solid 4 burner and eventually offering to host Grilled Meat Mini Meets.

Irvine is mainly Koreans, not great for Vietnamese but not terrible. From what I remember of Brodard is good, but not a place to get pho. That’s another thing I forgot to mention, be sure that ‘pho’ is in the name of the pho place you go to.

Yeah. Brodard is more upscale and not a pho place. But the beef stew is nice and they have a unique take on the spring rolls.

You'll probably be safer there. Los Felix is a funky eclectic area. The problem is that it's too close to the epicenter between Hollywood and skid row*. It's generally safe, but if you even so as much leave an IEM or portable player in your car, expect the window to be broken and the items stolen. There are also a lot of zombies walking around screaming weird shit. You could be eating at a restaurant on the main strip, and then suddenly some weirdo smashes into the window by your table like this:

    * There is a 7th dimensional being several miles in radius and height located between Hollywood and skid down near downtown. This being is sort of like a demon, for lack of better term since we humans really cannot comprehend the nature of its existence. This "demon" has thousands of tentacles, all sucking out the lifeforce of those dreaming of making it big in El Lay. It sucks dreams, hopes, and in turn causes pestilence, drug addiction, narcissism, insanity, perversion, etc. Griffith Park serves as a good geographical feature that limits the reach of this demon.

There’s a chance of Steve Guttenberg smashed against the window in Los Feliz?!

I can confirm. Pho is my people's food and Pho 54 is the best.

Also can confirm. The spring rolls with the special sauce is amazeballs. 10/10.

This is pretty local to me. Assuming Friday morning is free, I'll meet you guys there. I'll be looking for tips on what to order if you're a Pho newbie. I've had watery Thai soups with noodles, veg, and meat - but that's pretty different from Pho?

Pho should have a strong cohesive flavour. Watery soup nope.

I used to work at a pho restaurant. Good pho is one of the best things ever.

Watery as opposed to creamy. The Thai soups were spicy and packed with flavor. But yeah, probably still different.
