Old is fine - as long as it can run on Windows 10. If anything, I find older games are often more fun given that they were mostly good via game play - not features, graphics, production value, etc.
One of my favs is still using Stalker Call of Pripyat as a base and then modding it.
Realistic can include (but limited to or requiring) any of the following but I realize it's still a game. Analogy would be like Forza or Gran Turismo series vs average arcade racer:
- Projectile trajectory (maybe even more detailed factors like projectile choice, temperature, atmospheric densities, etc.)
- Realistic damage and impact - ex shot in leg = can't run well
- Stamina, strength, and skill factor into running, gun handling, etc. - ex: spec ops veteran is going to use/handle guns better than average 3rd world joe
- Don't screw up guns for "variety and balance" - shotguns turn into ant farts at 20+ yards in most games
- Magazine management
- Guns will jam and you have to fix it, etc.
- On and on
