@Boops the 02 is the most ubiquitous and is what I use. I brew 340 to 500ml on it each day. The plastic V60 is what’s recommended by folks like Scott Rao and is easier to maintain temperature control and consistency than the ceramic or glass versions.

Just make sure you thoroughly preheat the V60 if you get a ceramic or glass version.

Thanks for the guidance. I went for the plastic. My wife requested something "less fussy than the aeropress". I'm not sure if this qualifies? I'm hoping there is an "easy" mode where she can just pour some water over the grounds without worrying too much about timing and get a somewhat decent result.

She is not as fussy about the coffee as me (duh) so I am looking forward to learning how to make a kick ass cup of coffee while not burdening her with something she has to care too much about.

We have a nice gooseneck kettle so there will at least be some delicacy to the stream of water with just a little effort.

That's exactly how I use a V60. Put the grounds in the filter, add all the water at once, swirl it around a few times, and let it drain. Great brew, way less effort than Aeropress.

That said, I like very strong, highly over-extracted, sludgy drip coffee, so this might not work so well for someone trying for an acidic, fruity cup.

Good to hear. We should be able to dial it in by adjusting grind size and proportion of coffee/water I’m thinking

For fussy people, I'd recommend getting a scale for brewing on, and if you have an android phone try the Brew Timer app.
It helps guide you through pouring the water at the right time and rate, and has a bunch of different recipes to try for different brewing methods.

Of all the pour overs out there, the V60 is the fussiest and easiest to ruin a cup on if you’re really dialing in light roast third wave coffees. The Kalita Wave is what I usually recommend for easier consistency without the need to be careful. The V60 is my favorite though, and I find it easy to use on a daily basis with new coffees. Just make sure you are using a scale to measure water; proportion is critical with the V60.

Hmmm. I do have a scale I can bust out. Maybe I’ll try the Kalita also and see what we like best.

I've been looking at this scale with the flow rate monitor but haven't pulled the trigger yet.

I have a metal 02 v60 which I do not recommend because metal is not an insulator.

Also if you want drip coffee that isn’t fussy I would avoid the hario cone (edit: as Vansen already mentioned) and get a ceramic one that fits regular coffee filters. The opening for a Hario cone is much bigger which means grind size affects how fast it filters quite a bit. I understand why people serious about pourover use gooseneck water kettles and and need a grind as precise as espresso. My wife doesn’t want her coffee very complicated either and she’s not a fan of the v60 at all

Least fussy ‘good’ coffee is either French press or the cone I already mentioned

Do you do drip or espresso with it?

I wish I could find a locally roasted decaf that tastes decent. Drinking Illy decaf (mostly my wife, but it's a PITA to pull a decent shot with).

Can't remember who did it (possibly James Hoffman), but I saw a review on YT that showed the flow rate function doesn't really work in a meaningful way.

I went through a phase of convincing myself I needed a nice, expensive, shiny espresso machine in my life.
After researching the sh!t out of it I decided on the Rocket Apartamento. I found a dealer who was kind enough to give me a full-on hour-long demo of using and maintaining it, sampling some really delicious coffee in the process.
    That was it. SOLD!
I ordered one the day after and was told delivery would be within 2 weeks.

Told a friend who told me it was out of character for me to spend so much money on something I'd hardly use.
True. But what she failed to realise is that I had gone through the self-convincing phase where rationality, economy, practicality all goes out the window as you pass that point of being convinced by yourself, someone else, a demo or whatever and promptly reminded her about the nice shiny pair of Louboutin shoes she bought for herself that she wore when we went to a gig this one time and how I ended up carrying her on my back from the train station to her house at the end of the evening becasue her feet were so sore.
    So mnurr, rightbackatchabetch! lol

In any case, she won in the end because I got invited round to hers for coffee whereupon she challenged me to make a case for buying the Rocket over her tiny little, but equally shiny, DeLonghi Dedica and I couldn't. I saw reason , rationality and reservation and called off the purchase of the Rocket and bought the Dedica.

I've been using it for about 3 years now and only recently stopped becasue I have a taste for stronger coffee these days which the Dedica just can't muster sadly.
So now I'm back to using my old Braun drip coffee maker and the Dedica has been relegated to frothy milk duty.

Yes, my friend was recompensed for her sound advice.
Still find myself longing for a Rocket however and oh....my....gawwwwd.... have you seen their new portable espresso machine???
I fear I may be slipping back into 'go on buy it, you know you want it' mode. lol

Flow Rate Sensor: Ah, thanks for letting me know. I will be sure to look for that review before pulling the trigger.

IMO there is plenty of good argument for a Rocket Apartamento over ANY DeLonghi.

Of course there are. But when levied against the price differential it becomes hard to justify those arguments and then the decision becomes somewhat abitrary.
I may get one eventually. Maybe when I start drinking more than 2 cups a day.

I met my partner online and one of our first conversations was about coffee, with me helping her calculate what her quantitative and qualitative return on investment would be on buying a nice pour-over setup. I wound up buying it for our first Christmas together. The following year upgraded to an Alex Duetto III espresso machine with Mazzer Mini grinder.

    ...I don't drink coffee
