Also how bland their food tends to be unless the chef has the guts to go hard on spices and flavours. If you cannot smell the flavours, just hope the chef runs a tasty kitchen.
Somehow, even here in India, where a "pinch" of salt is usually a handful, and I have an almost-none salt policy at home, I can stand it. But I have a dear friend in England who can't comprehend that people can live without salt. And sometimes, I can still taste it on my lips and tongue the next day. Apart from which, they are a really great cook.
Butter and salt: the cheap shots to goosing flavor, easily learned by chain restaurant chef wannabees. Salt lips is a tip off. Sometimes they even salt salads!!! Thanks to cardiac issues I must maintain a low sodium diet and can very much appreciate Real Chefs(TM) who know their ingredients, herbs and spices. They achieve delectable dishes without the cheap shot flavor goosing.
