    We finally got an Asian market in Waco. My Asian cooking already tastes miles better with more authentic flavors. So excited!

    Made some Indian food tonight. A basic chicken curry and saag paneer. I really took time to build the flavors and give the curry a nice long simmer and it was delicious.

    Rib roast in the oven now. Instead of using oil for the sides to keep the salt and pepper on, I used chili crisp instead.

    Nuts, just checked it (at 100 on the way to 118) and the roast portion has fell over and partially split off from the bones. Oh well.

We're much more into the crawfish than the corn, potatoes and sausage (though the andouille sausage is legit). We also had red beans and rice (not pictured).

    It's a lot of work for very little reward, but that's consistent with the normal life experience.
    And it tastes great, which is above what we can normally expect.

    Well, you rip the tail off, suck the head to get the juice, then peel the tail and eat the meat. So, yes?

    It’s actually pretty quick and simple with the right technique. If you pinch the tail very near the bottom and then pinch up a little the tail meat will usually pop right up and out of the exoskeleton.

    Scallop rillettes from Brittany France - tastes like scallops, probably pollock, some cream, and some vegetables (carrot, zucchini, and a few other vegetables stereotypically in French food).

    Crappy phone pic + low effort dish as I didn't do anything other than put the rillettes on the bread, but posting anyways b/c it's one of the better things I've eaten in a while. Very tasty despite being relatively simple. I need to learn to make this, but even then, IDK if it will be quite the same as ingredients I use probably won't be the same, etc.
