It's a Shrove Tuesday tradition in some places, inc. the UK, to serve pancakes as a festive treat. Not as much fun as Mardi Gras in New Orleans, though...
Yeah, not "world pancake" day as such, but Shrove Tuesday, the day before Ash Wednesday, which I think is the beginning of Lent (my wife muttered something about it).
As a kid, I was told that pancakes were using stuff up before lent. On Shrove Tueday.
